You are correct that one benefit of volume group snapshots is one click restore from the GUI. GUI features may be less valuable if you are using external scheduling software like SPS, but it is available if you choose to use it.
SPS is older software and may not support all of the features, but they did recently add support for volume group snapshots: https://www.ibm.com/docs/en/sps/8.1.24?topic=linux-whats-new-custom-applications
